How to cook Okra Soup

Ingredients:

1 Fresh okra
1 Meat (chicken, beef, or goat)
Palm oil
1 onion, finely chopped
2-3 cloves of garlic, minced Optional
2-3 scotch bonnet peppers or habaneros (adjust to your spice preference)
2-3 cups water or broth
Salt and pepper to taste
Optional: fish or shrimp (for added flavor)
Optional: leafy vegetables like spinach,kale, pumpkin/ ugu leave etc
Instructions:

Wash and chop the okra into small rounds or slice it thinly. You can also choose to blend it for a smoother consistency.

Season the meat with salt, pepper, and your choice of spices. In a large pot, heat the palm oil and add the chopped onions and garlic. Sauté until they become fragrant.

Add the seasoned meat and brown it on all sides.

Add the chopped scotch bonnet peppers or habaneros (adjust the quantity to your preferred spice level) and continue to sauté for a few more minutes.

Pour in the water or broth and bring the mixture to a boil. Reduce the heat, cover, and let it simmer until the meat is tender (this can take about 30 minutes to an hour, depending on the type of meat).

Once the meat is tender, add the chopped or blended okra to the pot. Stir well and let it simmer for another 10-15 minutes until the okra is cooked and slightly slimy.

If you're using fish or shrimp, you can add them at this point and cook until they're done.

Season the soup with salt and pepper to taste. You can also add leafy vegetables at this stage for extra nutrition and color.

Simmer for a few more minutes until everything is heated through.

Taste and adjust the seasoning if needed. Serve hot with your choice of side dishes.
