Since 1986, Emperor Specialty Foods Ltd has been a leading figure in importing and distributing premium gourmet foods. Starting with fresh shiitake mushrooms, the company expanded its product range in 1995 to include mushrooms from both China and local sources. By 1998, they became the first Canadian company to regularly import fresh mushrooms from China via ocean shipment. In 2001, they opened an office in China to strengthen supplier relationships and diversify their product offerings, now including imported fruits and vegetables. Organic shiitake mushrooms continue to be produced in Vancouver.
